Roti Tasting
Roti is a round flatbread originating from the Indian subcontinent. Growing up in St. Croix our exposure to Roti came from the Trinidadians. The Roti is folded in the form of a wrap around a flavorful filling of your choice including chicken, conch, goat, beef, shrimp or vegetables such as potato, pumpkin and spinach as well a variety of local condiments such as hot sauce and mango chutney being the most popular.
Since Roti is my favorite meal, I have tasted it in just about any location I can find them. But lately, I have found that they are just not the same. While recently visiting my home on St. Croix, I tasted at least four different roti and each left something to be desired. Whether it was a super moist roti shell, unsavory filling or too small of a wrap they did not meet my expectations.
As a self-proclaimed Virgin Islands Roti connoisseur, I have yet to place my finger on the root cause of the decline in Roti perfection. In the meantime I will keep tasting...
Bon Appetit!
